Tip
Pulse at a rate of 1 second on and 1 second off for an even chop, then hold the lever down to finish manual.
Does the Cuisinart Custom 14 knead dough?
Yes, Cuisinart says the 720 watt motor kneads dough, and the manual calls the included metal blade a chopping, mixing and dough blade Cuisinartmanual.
Start the machine, then pour the liquid through the feed tube only as fast as the flour takes it up. Once the dough cleans the inside of the bowl and forms a ball, run it 60 seconds to knead. The manual says never to process dough that is too stiff to knead comfortably by hand.
Can you shred cheese in the Cuisinart Custom 14?
Yes, the shredding disc turns most firm and hard cheeses into long shreds manual. The manual says to shred mozzarella only when it is well chilled, and Parmesan at room temperature.
Slicing is narrower. The manual says never to slice a soft cheese like mozzarella, or a hard cheese like Parmesan, because it may damage the disc or the machine. For a firm cheese like Cheddar or Swiss, chill it until semi-frozen, then use light pressure on the pusher.
Before you start
Never try to process cheese that is too hard to cut with a knife manual.
Is the Cuisinart Custom 14 dishwasher safe?
Yes, every part except the motor base is dishwasher safe, and Cuisinart recommends washing them that way Cuisinartmanual. Put the work bowl in upside down. The manual also says to keep the base out of water and other liquids.
How to set up and use it
Unpack the parts from the foam block, taking the detachable stem out first manual.
Place the base on a counter and read the instructions before you switch it on.
Plug into a polarized 120-volt outlet, and keep the cord off the counter edge.
Lock the work bowl onto the base, over the motor shaft.
Push the metal blade down the shaft as far as it will go.
Add the food, then lock the cover in place.
Slide the pusher assembly over the feed tube and press the sleeve down to lock it.
Press and release the OFF/PULSE lever to chop, or hold the ON lever to run without stopping.
Wait for the blade to stop, then turn the pusher assembly clockwise to lift it off with the cover.
Turn the bowl clockwise and lift it off the base before you take the blade out.
How to slice and shred
Put the disc on a flat surface and fit the detachable stem manual.
Lower the disc onto the shaft with the bowl already locked in place.
Cut the food flat at both ends, then pack the feed tube snugly.
Lock the small pusher, then slide the pusher assembly down over the tube.
Press the OFF/PULSE lever and keep light pressure on the pusher.
Use firm pressure for carrots and yams, light pressure for soft fruit and all cheese.
Lift the disc straight up before you take the bowl off the base.
The manual says to use the small feed tube and small pusher for narrow food like carrots, for adding liquid, and for dropping in garlic while the machine runs manual. Food that will not fit may go in from the bottom of the tube, where the opening is slightly larger.
Rinse the bowl, cover, pusher assembly and blade right after use, so food does not dry on.
Load every part except the motor base in the dishwasher, with the bowl upside down.
Wipe the base with a sponge, and keep it out of water.
To clear the detachable stem, slide the stem release up and hold it while water runs through.
To wash the metal blade by hand, fill the bowl with soapy water and move the blade up and down on the center shaft manual. Store the blade and discs as you would sharp knives, out of reach of children.
Check that the work bowl is locked on the base, because safety switches stop it running otherwise.
Check that the cover is locked, because the same switches cover it.
Press the pusher sleeve down until it locks, since a fast-stop circuit cuts the motor when it is loose.
If heavy work has overheated the motor, switch it off and wait 5 to 10 minutes.
The manual says the motor usually cools within 10 minutes, and in extreme cases it may take an hour manual. It also says the machine must stop within 4 seconds when you turn the cover. If it does not, Cuisinart says to stop using it and call 800-726-0190.
If liquid leaks onto the base
Take the bowl off the base as soon as you finish, and leave the metal blade in it manual. The blade then drops down and seals the bowl almost perfectly. A leak between the bowl and the cover during a run means too much liquid went in.
If the dough will not clean the bowl
Remove half the dough and run it in two batches, if the load is over capacity manual.
For crumbly dough, add water one tablespoon at a time while the machine runs.
Wait 10 seconds between each addition of water.
For wet dough, add flour one tablespoon at a time until the dough forms a ball.
If the blade rises in the bowl
Push the blade down the shaft as far as it will go before every run manual. Very sticky dough can also lift it. The manual says to reinsert the blade and add 2 tablespoons of flour through the feed tube with the machine running.
